3 Cheese and Spinach Pastry

Tasty filo pastry with spinach and lots of cheese.
A classic vegetarian Turkish/Greek recipe: Spinach and Cheese Börek made by layer and layer of goodness.
In Turkish recipe we use fetta cheese, in my kitchen, I like to make this recipe with many kinds of cheese as I can This simple recipe is ready in an hour and a perfect dish for vegetarian dinners or parties.

Ingredients 

1 cup: 200ml

  • 1 large diced onion
  • 500 gr fresh or frozen spinach ( drained, and pressed to remove extra liquid)
  • 1 cup of crumbled feta cheese 
  • 1 cup of grated mozzarella
  • 1 cup of grated cheddar
  • 3 eggs, lightly beaten
  • 1 cup of chopped green onions
  • 1/2 cup of chopped flat parsley
  • 1/2 cup of chopped fresh dill
  • 1/1teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 cup of milk
  • 1/2 cup of olive oil +4 tablespoon extra for cooking spinach
  • 1 package of Turkish or Greek filo pastry
  • 2 tablespoon butter, melted

Instructions

  •  Cook onion over medium heat with 4 tablespoon olive oil until they are soft
  • Add spinach and cook gently until they are soft. Remove from the pan in a large bowl, add the feta cheese, cheddar and mozzarella, green onion, parsley, dill, salt, pepper and mix well. Set aside.
  • In a smaller bowl mix eggs and milk with 1/2 cup of olive oil
  • Preheat oven to 200C. Brush large glass cookware like pyrex with melted butter.
  • Carefully place one sheet of the filo pastry in glass cookware, brush with melted butter, keep the sides hanging out. Cut rest of the filo sheet in 2 halves, place one piece on top of the buttered filo pastry in the glass cookware
  • Spread 1/3 of the spinach mix on to the pastry cover with filo pastry, spoon 1/4 of your egg and milk mixture
  • Repeat the process with the rest of the products 2 more times, cover the top with half of the filo pastry brush it with rest of the melted butter, fold in with the pastry sides hanging out, spread rest of the egg and milk mixture
  • Bake for 30-40 minutes, until golden brown. Remove from the oven and let settle 10 minutes before serving.
