Easy pizza recipe

Pizza, one of the best comfort food makes most people happy. When I was very young, mum’s first restaurant was a pizza restaurant! 

Meaning, I grew up eating lots of pizza. Over the years, I get a chance to work with many excellent Italian chefs where I managed to learn all the secrets for the perfect pizza.

1 cup: 200ml

For the Dough

  • 1/2 kg (3 1/2 cups) bread flour 00 or all-purpose plain flour
  • 1 teaspoon of sugar (adding sugar to fresh yeast makes it easier to mix into the water and encourages it to ferment)  
  • 225 ml (1 1/4 cups) water (room temperature) 
  • 3/4 tablespoon active fresh yeast (if not 1 1/2 tablespoon active dry yeast)
  • 1 teaspoon of sea salt
  • 3 tablespoon extra virgin olive oil

Method

Dissolve the yeast in a half cup of water with sugar and salt, rest it for 15 minutes.

Place the flour, yeast mix, olive oil and the remaining water in a large bowl. Begin mixing until the flour has absorbed all the water, then knead the dough until it ‘s smooth and elastic. A good way to check the elasticity is right is to stretch a piece of dough and if it forms strong without breaking then it is ready.

Let the dough to rest, covered with plastic wrap, for 30 minutes in winter or 20 minutes in summer. 

This dough recipe works great if you like to freeze it and use it another day. All you need to do is take it out of the freezer and keep it in room temperature for 2-3 hours.

Note: This recipe makes 3 pizzas (250 gr each)   

If you have one of the heavy-duty kitchen mixers you can make your pizza dough to slice the ingredients and grate your cheese, your mixer with a different attachment will be your best friend in the kitchen.

For the Sauce

 In Italian cuisine, “alla pizzaiola” refers to the tomato-garlic sauce which is mainly used on pizza has garlic, but some regions use onion in their pizza sauce in Italy.

Ingredients

Highest quality canned tomatoes

3 garlic cloves, crushed

1/2 teaspoon of sugar (to balance acidity)

1/2 teaspoon of salt

3 tablespoons of olive oil 

1 teaspoon dried oregano

Canned tomatoes are just great for making homemade pizza sauce. There are two ways you can prepare your delicious sauce. 

You can put everything in a blender, this way pizza sauce is ready to be used as soon as it’s blended — no cooking needed!

Another option is to blend all the ingredients and cook for 20 minutes on a slow heat, then use it!

For the Topping

This is where all the fun starts!

You can use a mix of grated mild cheddar and grated mozzarella or just fresh mozzarella for your taste. There are no rules for what to use to create your best pizza. 

If you are vegan, you can use any style of vegan cheese which taste so great! You may also change the toppings as you like and have it over and over again day after day. 

I try not to eat meat, so I like to use all different types of mushrooms, peppers, olives, capers, courgettes and cherry tomatoes.

If you love your meat, you can mix and match any meat you wish! Some people love to try this recipe with seafood, especially prawns and fresh chillies taste excellent.
