Chicken Parmagiana or Eggplant Parmesan

Chicken parmigiana is a popular Australian and Italian-Americans dish which is very easy to make and colourful to serve. The Chicken Parmigiana recipe needs a few simple ingredients to make!

INGREDIENTS

1 cup: 200ml

  • 4 chicken breasts (If you are vegan or vegetarian this will be perfect with eggplants)
  • 2 eggs (for vegans or vegetarians you can always use coconut milk)
  • 2 cups of dried breadcrumbs
  • Salt and pepper
  • 1 cup of plain flour
  • Sunflower oil for frying
  • 1 garlic clove crushed, plus extra halved clove
  • 2 tbsp. extra virgin olive oil
  • Dried oregano
  • 2 cans of good-quality tomato passata or chopped tomato
  • 4 thin slices (80g) of smoked ham
  • Grated mozzarella or sliced fresh mozzarella
  • Grated cheddar
  • 1/2 cup finely grated parmesan
  • For vegan or vegetarian recipes you can use vegan cheeses

     METHOD

  • First, you will need to coat the chicken or thick-cut the aubergine (You can also make your chicken flat with a meat mallet or rolling pin, just beat it until flat or (like me) cut sideways to 2 halves)
  • Place breadcrumbs on a plate, then spread the flour on a second plate and whisk eggs with salt and cracked pepper.
  • Dust the chicken breast with flour and dip into the egg mixture and coat with breadcrumbs. Place onto a tray. 
  • In eggplant version of his dish, you can use the exact same method replacing your eggs with coconut milk or you can grill your eggplants with olive oil till they are soft enough to be used.
  • Meanwhile, heat the sunflower oil in a large frying pan over high heat and fry your breaded chicken or your eggplants till golden brown.
  • Put the chopped tomato (or the passata) in a medium pan and add salt, cracked pepper and oregano, then add olive oil and cook on medium heat for 5 minutes.
  • Transfer the schnitzels (breaded and fried chicken) toa baking tray, top them with tomato sauce and ham. After adding mozzarella, cheddar and parmesan cheese on the top, put it to the top shelf of oven and grill until cheese is melted and golden.
  • If you will like to get everything ready and use later. You can build it and keep it in the fridge. Before serving place the tray in the oven, and bake it for 10-12 minutes.
