Creamy Mushrooms

This easy creamy, tangy, and full of flavour mushrooms is a great recipe and it’s so versatile, you can have it as a main with anything from rice to pasta or perfect side dish served with a juicy steak or any type of chops you prefer! You can use vegan cream to create vegan version of the same recipe!

Ingredients

  • 1 tbsp olive oil
  • 1teaspoon butter
  • 1 medium onion, finely chopped
  • 500gr button, chestnut or any type of mushroom, wiped and chopped or sliced
  • 50ml or more dry white wine
  • 1 teaspoon corn starch
  • 200mldouble cream
  • 1teaspoon vegetable stock or ½ teaspoon salt
  •  freshly ground black pepper, much as you like

Method

In a pan fry the onion with some olive oil and butter until softened but not coloured.

Add the mushrooms (cut the way you like) and cook for 3–4 minutes until the mushrooms are soft. Stir in the cream

In the meantime mix, the corn starch in 3 tablespoons of water then add into your dish. Finally, add the wine and the stock (or salt) season with black pepper. You can serve this recipe with any type of rice, pasta or fresh bread
