Easy Chicken or Vegan Stew

If you’re a fan of comfort food and enjoy sharing with friends or family, this is the faster way to make a Chicken or Vegan Stew serve it with creamy mash potatoes on a cold winter days

Ingredients for Mash Potato

  • 1 kg potatoes about, cut into chunks
  • 2 tablespoons butter or dairy-free butter substitute
  • 1 cup milk or any type of vegan milk 
  • 1 teaspoon salt 1/2 teaspoon cracked black pepper
  • Pinch of vegetable salt

Instructions

  1. Peel the potatoes, cut into big chunks and place them in a large stockpot. Fill with hot water above the potatoes, add the salt. Cook for 15-20 minutes till soft. You can check by piercing a potato with a fork. Drain.
  2. Mash the potato with using a potato masher or hand blender.
  3. Stir in the milk ( of your choice), butter or any other vegan option butter and season with vegetable salt and pepper to taste. If the mashed potatoes aren’t quite creamy enough, add more butter. or milk

Ingredients for The Easy Stew

  • 3 tablespoon olive oil
  • 2 cup cut chicken ( if you are cooking vegan option can replace the chicken with Quorn pieces)
  • 1 small chopped onion
  • 1 cup chopped mushrooms ( any type mushrooms you prefer)
  • 1/2 cup chopped bell peppers( any colour)
  • 1 1/4 cups warm water and 2 tablespoons of gravy granules 
  • 1/2 tsp salt and pepper, each
  • 1/2 teaspoon garlic granule

Instructions

Place oil in a large heavy-based casserole pot or wog over high heat.

Place the chopped onion and the chicken or Quorn pieces if vegan recipe.

Cook for 5 minutes

Add the pepper chunks and mushrooms, cook another 2 minutes

Add gravy into warm water, mix until incorporated.

Slowly pour in half of the mix while stirring, then pour the rest in add the garlic granules, mix well
