Homemade pasta

4 large eggs

3 large egg yolks (only yolks, we can use the leftover egg whites to make Pavlova)

2 1/2 cup of “00” flour

1 1/4 cup of semolina flour

2 tablespoon olive oil

1 1/2 teaspoon fine sea salt

1 handful of water

When you think about it making pasta it may feel like so much work. Turns out it is not hard at all. The dough will take 10 minutes to prepare then you have 30 minutes to enjoy a glass of Rose! When you start to mix your ingredients, making your dough and rolling out your pasta fun begins!

There is nothing like homemade pasta.

Very easy to make by hand or if you have a food processor or even standing mixer it will only make it easier.

Let’s start

If using a food processor you can use a normal blade to mix everything. Simply add all your products together except the olive oil and mix it well for 10 seconds. Then you can remove the dough and use the oil for your hands, that way your dough sticks together without sticking to your hands. Knead the dough for 2 minutes, cover with a wet cloth and rest for 30 minutes.

A mixer will be the same process. You need to use the roller attachment for this.

If you are making your pasta by hand, place the flour on a kitchen surface or in a large bowl, make a well in the centre crack the eggs, add your salt and water slowly, and use the oil for your hands so your dough mixture wouldn’t stick to your hands. You can beat your eggs in the process with a fork or you can mix them in a cup first and pour them in.

There is no secret to kneading your dough. It is hard work to start but gets an easier a couple of minutes later.  Knead the dough for about 10 minutes until smooth and elastic. Cover your dough with wet cloth and rest for 30 minutes.

When I had my restaurant in Bodrum we were quite famous for our homemade pasta. I use to make it by hand and I never had to go to the gym, you can see from my arm muscles! If you go to Italy most Italians will be making the pasta with a rolling pin, and wouldn’t even consider having a pasta maker.

Sprinkle the surface with a generous flour dusting, then shape your dough portion into a flat disc. Roll out your dough until your desired thickness. If you are not sure how thick your pasta should be, you can lift your pasta, and you should be able to see your hand through the dough.

If you are using the machine to roll your pasta, make sure you have your space empty and clean. Use your dough about the orange size and press it down as much as you can to make it flat.

First, using the widest setting run your dough through a couple of times, dust your pasta lightly every time you run it through the machine. Now you’re ready to click the machine down and keep rolling your pasta and again down on the setting till you get the desired thickness for your taste.

Time to cut your pasta

Pasta dries very quickly especially if you are making your pasta in the summertime, it will dry even quicker. Best way to cut your pasta is straight after rolling it.

You can choose any shape you like. If you like pasta shapes like tagliatelle you can dust your pasta with flour folded and keep dusting every time

you folded, you can use a pizza cutter or large sharp knife to shape it.

If you like seafood pasta or even just cream or tomato sauce with parmesan you should try to make black pasta. It doesn’t just look elegant, it tastes amazing. If you can find squid or cuttlefish ink fresh or frozen, you can use the same recipe, mixing your water with the ink to add into your dough. You can be creative and make your pasta with sundried tomato, spinach or any vegetable paste even with cacao.

If you choose to make extra and dry them out for later, you can simply hang them on a tin rolling pin and keep them on a couple of breakfast boxes till they dry. In a plastic food container, they will keep them another 2-3 weeks with no problem.
