When you are in Turkey or Greece Tarhana or Trahanas is one of the most popular traditional soup made from a fermented dough mixture of yoghurt, flour, and vegetables. The original recipe comes from the old generations. For hundreds of years, grandmothers used to do, now younger generations are following them.
This natural, healthy, homemade Vegan-friendly soup has incredible benefits.
Itis good for the immune system, digestion, regulates bad cholesterol and high blood pressure.
Ingredients for The Dough
- 1 kg red bell peppers
- 1 kg onions
- 1 kg tomatoes
- 4 cups of water
- 1 tin drained chickpea
- 1/2 kg yoghurt (plain) or vegan option you can replace with plant-based alternative vegan products like soya natural
- 1 kg flour
- 1 packet yeast (active, dry)
- 1 tablespoon salt
- 1 tablespoon hot red pepper
- 1 tablespoon black pepper
Instructions
Chop bell peppers, boil them in the large cooking pot gently until soft. Drain them, then add the cooked chickpeas and rest of the ingredients except the flour in a food processor.

Transfer into a large plastic bowl, add flour step by step and knead gently until the dough is elastic and doesn’t stick to your hands
Transfer the dough in a stoneware or glass bowl and cover with a lid, the dough needs to be fermented for ten days,

add a handful of flour every day and knead for 5 mins for another 5 days
Divide the batter into small pieces on a baking sheet cover with towel or baking parchment. Leave the sheets in a dry place until patties are completely dry. Flip them over and allow the other side to dry
If you would like to keep the dough fresh, divide into pieces keep them a airtight container in the fridge or you can freeze it.
Ingredients for The Soup
- 2 tablespoons of the dough
- 6 cups of water
- 1 tablespoon tomato paste
- 1 chopped onion
- 2 tablespoon olive oil
- stock cube
Instructions
Mix the dough by placing it in a bowl with a cup of cold water and stir occasionally
In a large pan, fry the onion with 2 tablespoons of olive oil on medium heat, add the tomato puree, cook for another 2 minutes, add rest of the water (you can add it as boiling water).
Your soup is ready, you can serve with crumble feta or any cheese you desire
