Emy shows us how to make one of the best Italian Pizza from her home town Apulia. Giving us all the best tips of how to do the authentic Italian Pizza
This unusual pizza for most of us has crushed boiled potatoes in the dough. Most heavenly pizza you can ever taste. So easy to make pleasure eat.
This pizza recipe is a perfect recipe for family sharing meals or parties. You can make extra dough and freeze it.
Ingredients
- 500g ’00’ flour or plain flour, plus extra for dusting
- 1 teaspoon salt
- 1 teaspoon sugar to activate the yeast
- 1 tablespoon dried or fresh active yeast
- 400ml warm water
- olive oil, for greasing
- 1 medium-size boiled and crushed potato
Method
Mix the yeast and sugar in the warm water, rest for 20 minutes till yeast activates.
If you are using in a standing mixer put the flour, salt, and crushed potato in the mixer bowl, you need to use the dough hook, start the machine on slow, add the yeast mixture slowly then keep the speed on medium-high. The dough should come together as a ball, oil your hands to remove the dough from the hook
If you are not using a standing mixer, place all the ingredients it in a bowl oil your hands and knead on your work surface about 10 mins
. Oil another bowl and place the dough in, cover the bowl with cling film and rest about 1 hour
If you want to get light and crisp pizza, use your fingers to stretch the dough out.
Place the pizza on a floured baking sheet or greaseproof & baking non-stick paper
For the topping,
My friend Emy used good quality tin tomato (just put it in the blander for 10 seconds)
Fresh mozzarella
Good quality parmesan or she said pecorino cheese would be the best.
Basil, flat parsley and dried oregano
Chopped garlic
Olive oil
She made 2 large pizza with the dough
First spread the tomato sauce on the dough

Oregano, chopped garlic parsley and grated fresh parmesan or pecorino cheese
Pizza 2
Oregano, chopped fresh basil, fresh mozzarella because we love parmesan (especially Marc loves it) she had to add some
Drizzle with best quality olive oil from her home town little bit salt and chilli flakes
Cook in a warm oven on 250C for 18 minutes
